Broccoli Pasta Salad
This is an extremely simple recipe that you can easily add cheese, cubed cooked ham or chicken, nuts, grape halves, etc. to make it your own, or to turn it into a cool summer meal. The more ingredients you add, simply add more mayo, and if you double the original amount, another envelope of soup mix.
2 C uncooked rotini pasta (I used 1/2 of a 12oz box)
2 C fresh broccoli (or 12oz bag frozen peas to make salad last longer)
1 C Miracle Whip or mayo
1 envelope Lipton savory herb and garlic soup mix
Cook pasta according to package directions for al dente
rinse VERY well under cold water
place in frig to cool
mix mayo and soup mix together in a small bowl, for milder soup flavor add more mayo
cut broccoli into small florets, discard thick stems
mix all ingredients together and chill until serving
if using broccoli, eat salad within 2 days, using peas, it will last longer (broccoli starts to taste and smell funny)
