Cottage Pie




1 lb ground beef
3 C leftover mashed potatoes
1 small onion chopped
1-2 carrots chopped
8 oz package sliced mushrooms
1 Tblsp flour
1 Tblsp butter, softened
2 Tblsp tomato paste
1 C beef broth
salt and pepper to taste

preheat oven to 350
combine butter and flour, stir well
saute carrots and onions until crisp tender
add mushrooms, cook until brown
remove veggies from skillet
add beef and brown
stir in tomato paste, cook about 3 min
stir in broth, salt, and pepper
return veggies to pan and bring to a simmer
add flour mixture and cook 1 min to thicken stirring constantly
spoon meat mixture into 9X9 or 2qt baking dish
spread potatoes on top
bake 20 minutes or until bubbly
