Crock Pot Cavatini

1 lb ground beef
1 small onion
1-2 cloves garlic, minced
12-16oz pasta (thicker is better, like wheels, penne, etc. great time to use a little of everything if you have leftovers from different boxes)
2 C shredded mozzarella
pepperoni, as much or little as you like
28-32oz jar pasta sauce (I like Prego traditional flavor)
4oz can mushrooms, or equiv sauteed fresh
1 Tblsp Italian seasoning
salt and pepper to taste

cook ground beef with onions and garlic
meanwhile, cook pasta according to package directions for  A LITTLE LESS THAN AL DENTE, should still be a little stiff
rinse immediately in cold water to stop cooking process, drain well
stir together meat mixture, sauce, seasonings and mushrooms
spray a 3-4 qt crock pot with non-stick spray
layer 1/3 meat sauce, then 1/2 pasta
add 1 C cheese
place 1/2 pepperoni on top of cheese
repeat layers, ending with meat sauce then cheese and pepperoni
cover and cook on low 2-4 hours (start checking at 2 hours, then write down how long your crock takes as each one is a little different)
