Parm Baked Chicken



4 boneless, skinless chicken breasts
2 C crushed crackers such as ritz or saltines
3/4 C Parmesan (try fresh grated)
2 Tblsp butter melted
pepper to taste

preheat oven to 425
spray a large, rimmed baking sheet with non stick spray
slice each chicken breast in half horizontally, making eight thinner pieces
Place pieces in between plastic wrap and pound down to 1/4 inch thickness

combine dry ingredients in one shallow dish
place melted butter in another shallow dish
coat chicken in butter then cracker crumbs
places on baking sheet in a single layer
sprinkle any excess coating over the top
bake 12 minutes, or until golden brown and cooked through
