Pork and Squash Stew

2 lb boneless pork loin cut into 1.5 inch cubes
1 med butternut squash 1-1.5 lb, peeled, seeded and cut into 1.5 inch cubes
6 small red potatoes cut into quarters
4 med carrots cut into 1/2inch slices
1 med onion chopped
2 cloves garlic minced
2 dried bay leaves
2 tsp rubbed sage
1 tsp salt
1/2 tsp pepper
1 28oz can crushed tomatoes undrained
parsley for garnish

spray 5 qt slow cooker with non stick spray
place all ingredients and mix well
cover and cook on low 6-7 hours
remove bay leaves before serving

1.25 cup serving = 310 calories
