Easy Chicken Enchiladas

4 6oz chicken breasts
olive oil
1.5 c cheddar cheese
8 6inch corn tortillas
2.5 c enchilada sauce

rub chicken with olive oil and roast at 400 degrees until cooked through, about 14-16 minutes
let cool then shred
toss chicken with 1 c of the cheddar cheese
divide evenly among the 8 tortillas and roll up
place in a baking dish and top with the sauce and the half cup of cheese
bake at 400 degrees until heated through about 15-20 minutes
