Easy Potato Soup

1 16oz pkg diced frozen hash brown potatoes (or equiv fresh)
1 small onion minced
1 14oz can chicken broth
1 10oz can cream of chicken soup
1 10oz can cream of celery soup
2 C milk
2C water

combine potatoes, onion and water in 4qt pot and bring to a boil
cover, reduce heat, and simmer for 30 min
stir in broth, soups and milk and heat through, but do not boil

top with cheese and/or bacon bits
