2 C sugar
16 oz can pumpkin pie mix
2 tsp vanilla
2 tsp baking powder
1 tsp salt
2 C shortening
2 eggs
4 C flour
1 tsp baking soda
preheat oven to 350
cream together sugar, shortening and eggs
add pie mix and vanilla, keep beating
mix all dry ingredients together
slowly add while mixer is still going
drop by spoonfuls onto cookie sheet (my mom always covered the cookie sheet with wax paper)
bake 12-15 minutes
can sub margarine for shortening
can sub applesauce for half of the shortening for less fat and a more moist cookie
