Roasted Pork and Veggies

4-6 pork chops about 3/4 to 1 inch thick....bone in work better
as many as you want of your favorite hearty vegetables
the pic shows carrots and a red, white and blue fingerling potato mixture
2 Tblsp olive oil
your favorite seasoning to taste...I used Greek seasoning

preheat oven to 425
chop veggies to bite size
put all ingredients into a large zip top bag and shake to coat
place on baking sheet in one layer
bake 35-45 minutes
use a meat thermometer to check that pork is done
