Potatoes Supreme

1 32oz bag cubed hash brown potatoes, thawed
1 small onion chopped
2 10oz cans cream of chicken soup (or cream of celery, mushroom, golden mushroom, etc)
1 8oz tub sour cream

preheat oven to 350
combine all ingredients in large bowl
spray 9X13 baking dish with non-stick spray
pour mixture into baking dish
cover and bake 1 hour
remove cover and bake another 10 minutes
optional: add parmesan cheese last 5 minutes
